From the abstract
The research concerns the links between hunger, climate change and biodiversity loss, and how food systems can be made more sustainable. It notes that improving production efficiency and shifting consumption toward foods with lower environmental impact and better nutrition are important strategies. LCA is a common method for comparing the environmental impacts of foods and production methods, but many foods and methods have not been assessed, and methods for capturing effects such as aquatic biodiversity impacts are largely absent. The thesis therefore aims to support more comprehensive sustainability assessments of food systems. It evaluates the environmental performance of understudied seafood products and investigates ways to better represent biodiversity impacts in LCAs of seafood and other foods.
